I've been moving too slow :-)
I got a total of 10 responses from folks about gathering on Javaone.
Only one couldn't make it Wednesday, and several had problems with the
other days, so I think Wednesday is best.

That sounds like a good plan to me. Mars is a nice funky little SoMa
bar, serves good food too. I'm a bit concerned it'll be crowded with
other JavaOne folks, but it's far enough and obscure enough that only
locals would know to go there. I called, no one has rented the place
out that night.
Mars is at 798 Brannan, right at 7th and Brannan. To get there, walk
south from Moscone past the freeway (major streets are Howard, Folsom,
Harrison, Bryant, Brannan) and west to 7th (3rd, 4th, 5th, 6th, 7th :-).
Blocks are long down there, so expect it to be about 20 minutes. The
neighbourhood is not one of San Francisco's most scenic.
Hopefully people can meet up at the conference to walk down. Most of
the sessions right before are Jini sessions, I'll probably go to
